Lemon sorbet with Salmiakkola sauce

Lemon and liquorice are a great combination, as you probably already know if you are interested in liquorice. This is our absolute favourite way of using Salmiakkola sauce.

Choose a really well-balanced lemon sorbet, which should be fresh and tangy. First add the sauce like a mirror in the bottom of a beautiful glass bowl.

Scoop up the sorbet and sprinkle granules of liquorice over it. Cut out small ‘garlands’ of lemon peel or use a zester. Gently squeeze the juice out of them over the dessert if you want to have a slightly bitter twist. Finally, it’s never wrong to add a few salt flakes on top.

This is a taste symphony in which peppy meets creamy, sour meets sweet and liquorice’s unique aroma is accentuated by the lemon’s lively character. This is excellent if you want a little something sweet after dinner.
